It helps if you come in wearing the shoes you'll actually pair with the jeans. Boots or sneakers, it makes a difference, because that changes where the hem should sit. We'll pin the length on you, check the waist and seat, and talk through whether you want the original hem saved or a fresh one. Fast, sure. It also throws away the original factory hem, the part with the built-up edge and the broken-in fade, and leaves a flat band of clean denim at the ankle instead. On a pair you've worn for a year, that fresh hem looks off, and everyone notices it eventually.
